Instructions: 

Smoked Chili Butter... minutes and let cool.. Put 1 1/2 sticks of room temperature butter in a food processor ..add cooled shallot mixture..2 canned chipotle peppers.. juice of 1 lime..season with S & P ..process till smooth ..and scrape into bowl..refrigerate..good for a week..

Balsamic- Rosemary Butter..great on steaks..Combine 2 C balsamic vinegar..2 t black peppercorns in a small sauce pan and over high heat reduce to 1/4 C..8-10 minutes..Remove peppercorns and whisk in 2 t honey..2 T chopped rosemary leaves..NOW combine in a food processor with 1 1/2 sticks of butter and process until smooth..Scrape into bowl and refrigerate for 30 minutes to “set up”..Will keep for a week..remove from refrigerator about 30 minutes prior to using..

Chimichurri Sauce..great on steak..burgers..chicken..nice alternative sauce..Keep for a couple days refrigerated. In a food processor. Combine 4 garlic clove and chop fine..add 1 cup cilantro..rough chopped..1 C parsley..rough chopped..1 C scallions..sliced..2 jalapeno peppers..rough chopped..1/4 fresh squeezed lime juice..3 T sherry vinegar..1 1/2 C olive oil..S & P ..add more or less jalapeno to taste

Smoked Mayonnaise..combine 1/2 C mayonnaise..2 cloves of garlic..2 piquillo peppers..or pasilla pepper or pepper of choice..2 t smoked paprika..1/2 t kosher salt..Process till smooth and refrigerate..

Quick Steak Sauce..Whisk together 1/4 C Dijon Mustard..1/4 C whole Grain mustard..1/4 C Molasses..2 T Ketchup..2 T honey..! T prepared horseradish..1/2 T kosher salt..1/4 T pepper..

Sriracha Mayonnaise..combine 1/2 C mayonnaise..2 t fresh lemon juice..2 t sriracha sauce..1 T dijon mustard..S & P to taste..
