Homemade Brown Sauce/ Green Peppercorn Sauce

Great recipe from our "Sauce Class Basics"...this is how to make an expectable brown sauce..rather than the awful boxed stocks/gravy.


BASIC MEAT SAUCE..makes 1/2 C..double or triple this recipe if you use a lot! Much better than canned broths. Freeze in small containers.
Pulse the 1 onion..1 carrot..rough chopped in 1/2 inch pieces..8 cremini mushrooms.halved..2 garlic cloves in a food processor into 1/8 pieces..about 10 pulses. In a dutch oven over medium-high heat and add 1 T canola oil..8 oz. lean ground beef..plus 1 T tomato paste and cook stirring frequently until the beef is browned..8 minutes. NOW add 2 C dry red wine..4 C beef broth..2 bay leaves..4 thyme sprigs..2 t whole peppercorns and bring to a boil scraping the bottom with a wooden spoon. Simmer 20-25 minutes to about 2 Cups. Strain the sauce through a fine mesh strainer into a clean saucepan. Be sure to press the solids to extract more flavors. Sprinkle 5 t unflavored gelatin over the stock and stir to dissolve. Over medium heat bring to a boil.. Gently boil for 5 to 7 minutes until reduced to about 1/2 C. Remove from heat and cover to keep ready to use.

Herb Sauce..serves 4 after pan searing a steak..or in an empty skillet add 1 shallot (med size) diced..and saute in a 2 T butter. Stirring until lightly browned.. Add 1/2C white wine and scrape up browned bits (if you seared a steak)..Now add 1/4 C sauce base..1/4t white wine vinegar..any accumulated juices from steaks..return to simmer and cook for a minute..Off heat whisk in 2 T parsley..chopped fine..1 T tarragon..medium chopped..1 T chives ..chopped..3 T butter..S & P...

Green Peppercorn Sauce..after pan searing your steaks ( New York strip steak or Filet Mignon are great cuts here) add 1 medium shallot to skillet and cook until lightly browned. Off stove add 1/2 C brandy..return to stove top and lightly burn off the brandy..scraping up brown bits. Now add 1/4 C sauce base..1/4 C red wine vinegar..1/4 C heavy cream..2 T green peppercorns..1 t fresh thyme..S & P..reduce to creamy thick! Spoon sauce over steaks!
